Your restaurant did not serve as a duck during bird flu and stayed faithful to the Gers foie gras and the LESCURE family. They have now resumed their production.

In Saint-Médard, the Lescure family is one of the last to practice cold evisceration, that is to say that once plucked, the duck is kept cool 18 hours before any manipulation.
